This quick and colorful pasta dish is perfect for weeknight dinners or light lunches. Originating from simple Mediterranean flavors, it pairs tender ravioli with juicy cherry tomatoes, crisp asparagus, and aromatic garlic—all brought together with olive oil and herbs. It’s a balanced meal that feels both fresh and comforting.
12 oz fresh or frozen ravioli
1 cup cherry tomatoes, halved
1 cup asparagus, chopped
3 cloves garlic, chopped
3 tbsp olive oil
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt and pepper, to taste
Fresh basil or parsley, for topping
Grated Parmesan, for serving
Directions
Boil ravioli in salted water 4–5 mins. Drain and set aside.
Heat olive oil in a large pan. Sauté garlic for 1 min.
Add tomatoes and asparagus. Cook 5–7 mins.
Add ravioli, oregano, red pepper flakes, salt, and pepper. Toss gently.
Plate and top with herbs and Parmesan.
