Ingredients

Tomatillos 10lbs

Onion yellow 3lbs

Garlic cloves 60ea

Avocados large 6ea

Cilantro 5 bunches

Oil neutral/ veg/ grapeseed 1.5qt

Salt to taste about 2cups **

Directions

Add Tomatillos cleaned, onions (quartered), garlic cloves all to a large stock pot cover with water and boil for about 20/30mins or until tomatillos, onion and garlic are soft.

Blend all the cooked veggies with added water from the pot if necessary to blend along with one avocado and a cilantro bunch to each batch in the blender and emulsify with your oil to the desired consistency.

Check for one last taste test and adjust salt if needed
