Scalloped Potatoes

6 strips bacon, chopped

2 bulbs garlic

2 tablespoons unsalted butter add an additional 2 tablespoons if skipping the bacon

1/4 cup all-purpose flour

2 cups whole milk

1/2 cup chicken broth

12 ounces sharp cheddar cheese shredded

1/4 teaspoon sweet paprika

1 teaspoon thyme chopped

1 teaspoon rosemary chopped

6 ounces sharp

cheddar cheese shredded

4-5 medium yukon gold potatoes peeled and thinly sliced

1 teaspoon salt or more to taste

parsley for garnish

Directions

Slice potatoes thinly.

Add to boiling salted water for 8 minutes, drain and set aside.

Roast garlic with oil wrapped in tin foil at 400F.

Cook off bacon and remove from pan.

In same pan with bacon grease add flour to make a roux.

Add milk and squeeze in toasted garlic. Add shredded cheese and seasonings and combine.

Arrange sliced potatoes in a casserole dish vertically.

Pour over sauce evenly.

Bake uncovered for 35-45 minutes, remove and add more shredded cheese and bacon on top, then broil for 5 minutes.
