Breakfast Burritos

Ingredients

  • 14 Eggs

  • Andouille Johnsonville (13.5oz)

  • 2.19 lbs Vivaldi Onions

  • 1.68lb russet Potatoes

  • 6 burrito tortillas

  • Ketchup

  • Salsa?

  • cheese?

  • Oil

  • Salt, pepper, garlic powder, onion powder

Directions

  1. Dice potatoes, onions, and slice andouille

  2. Caramelize onions in oil. Then remove and set aside for later

  3. Pan fry andouille until crispy. Then remove and set aside for later

  4. Air or pan fry potatoes until crispy

  5. Fry eggs in leftover oil

  6. Once eggs are halfway done add in onions potatoes and sausage

  7. Wrap up (with ketchup? Salsa? Cheese?)

Notes

Potato’s turned to mush, cook either first on high or decrease portion

More eggs less potato onion mix next time
