Matcha Strawberries

Ingredients

1 lb strawberries (washed and dried)

1 1/2 cup (10 oz) white chocolate chips

1/4 cup (60 g) heavy cream

1/4 teaspoon salt

2 1/2 teaspoon matcha powder (sifted)

Directions

Prepare the strawberries. Wash the strawberries and lay them out to dry completely. Make sure they reach room temperature before dipping.

Melt the chocolate. In a heatproof bowl set over a saucepan of simmering water (don’t let the water touch the bowl), on medium-medium high heat, melt the chocolate, heavy cream and salt. Stir with a rubber spatula continuously until melted and silky smooth.

Sift in matcha powder. Turn off the heat and sift in the matcha powder. Stir with the rubber spatula until evenly incorporated. Set aside.

Dip the strawberries. Hold each strawberry by the stem and gently dip and roll the strawberry into the matcha chocolate to coat and let the excess chocolate drip into the bowl. If the stem has fallen off, use a toothpick inserted in the center of where the should be and dip the strawberry. Place on a parchment lined baking sheet. If decorating, sprinkle on the sprinkles at this time. Re-heat the chocolate mixture in the microwave in 10 second increments if it begins to harden.

Cool. Allow the berries to cool completely before enjoying.
