Preheat waffle iron fully for crisp edges.
Whisk oat flour, baking powder, salt, and cinnamon.
Blend eggs, milk, cottage cheese, and maple until smooth, then fold into dry mix.
Stir in diced apple just to distribute.
Lightly oil the iron and pour batter to thinly cover grids.
Cook 3 to 4 minutes until deep golden and fragrant.
Blend dip until silky and gently warm it in a small pan.
Serve waffles hot with the warm cinnamon dip and extra apple bits.
