1750 g warm water
11,325 g of flour
250 g diastatic malt
5250 g ice water
2250 g Poolish
250 g salt
125 g olive oil oil
Directions
Put yeast warm water, diastatic malt and olive oil into a mixing bowl mix add Polish flour mix shortly add ice water and sea salt and then mix for 10 minutes. Proof till doubled in size punch down and then weigh out and 10 ounce dough balls. Put in dough trays retired.
