3-ingredient Pineapple Cookies

Ingredients

Ingredients (makes ~8 cookies)

1 cup (96g) almond flour

1 scoop (30g) whey/casein protein powder

1 cup (165g) crushed pineapple, drained well

Optional: 1 egg white (33g)

Directions

Drain pineapple very well — press between paper towels.

Mix almond flour and protein powder, then stir in pineapple (and egg white if using).

Scoop into 8 cookies, flatten slightly, and bake at 350°F (175°C) for 10–12 minutes.

Cool completely before removing — they firm up and get chewy as they set.
