Sourdough Discard Tortillas

1/2 cup (140g) sourdough discard
1/4 cup (60ml) olive oil
1/3 cup (80ml) water
1 2/3 cups (205g) all-purpose flour
1/2 tsp (3g) salt
Directions
Mix together the sourdough discard, olive oil, and water in a large bowl.
Add in the flour and salt, and mix until the dough forms. Knead for 1-2 minutes with your hands until there are no dry spots and the dough is smoother. If it's too sticky, add a sprinkle of flour at a time until it starts to come together more and is smooth.
Cover with a damp towel and rest for 30 minutes.
Preheat a large skillet on high heat.
Lightly flour a surface and turn the dough over. Divide into 10 pieces.
Roll each piece of dough into a circle (about 1/4 inch thick and should look almost see through).
Cook individually on high heat for 1 minute on each side. Flip when the bubbles appear and the edges are firm, there should be some nice brown spots.
