Ingredients

1/2 large white radish

2 tbsp salt (enough to enoughly coat the surface of radish)

3~4 strands green onions

1 tsp garlic

1/2 tsp ginger

1/4 onion

1 cup water (enough to submerge all veggies)

Directions

Salt chopped radish for 1 hour

Drain the water from the salted radish (don’t rinse)

Add aromatics and water to the radish

Let it ferment in room temp for a day in hot weather/2 days in cooler weather

Keep it in the fridge and let it further ferment to your likings!
