Peanut Soba Noodle Salad

Ingredients

Peanut Soba Noodle Salad:

  • 1/2 package Soba Noodles

  • 1/4 small red cabbage

  • 2 carrots

  • 1 red bell pepper

  • 1 large cucumber

  • 1 10 oz bag edamame

  • Tofu (amount up to discretion)

Peanut Dressing to taste

Additional Salt, lime juice, peanuts, chili flakes, sesame seeds (optional/to taste).

Peanut Dressing:

  • 1/2 cup peanut butter

  • 5 tbsp light soy sauce

  • 1/4 cup honey

  • 3 tbsp sriracha

  • 1 garlic clove

  • 1/2 tbsp grated ginger

  • Juice of 1 lime

  • Water as needed to thin

Directions

  1. Make your dressing, then slowly add into salad until dressed to your liking. Taste and adjust for salt, acid (by adding more lime juice), and optionally add chili flakes, peanuts, and sesame seeds to taste.

  2. Cut veggies into long thin strips

  3. Cook soba noodles by package instructions

  4. Combine
