Gyudon - Rice Cooker

Ingredients

1 cup jasmine or short-grain rice

1 cup water

2 tbsp soy sauce

1 tbsp mirin

1 tbsp sake

1 tsp sugar

1/2 small onion, thinly sliced

1/2 tsp grated ginger (or 2–3 slices)

100g (about 3.5 oz) thinly sliced beef (like shabu shabu or hot pot beef)

Optional garnishes:

Egg yolk or soft boiled egg

Pickled ginger

Directions

Thinly slice your onions and set aside.

Wash 1 cup of rice thoroughly until the water runs mostly clear, then add it to your rice cooker with 1 cup of water.

Add 2 tbsp soy sauce, 1 tbsp mirin, 1 tbsp sake, and 1 tsp sugar to the rice and mix well.

Place your sliced onions and 1/2 tsp grated ginger (or sliced ginger) on top of the rice mixture, followed by the thinly sliced beef.

Cook everything on the regular rice cooker setting (white rice or quick cook both work).

Once the rice cooker finishes, let everything sit for 10 minutes before gently fluffing and separating the beef from the rice.

Place your rice in a bowl and top with the beef.

Optionally garnish with a raw egg yolk or soft-boiled egg, pickled ginger, and chopped scallions
