210g roasted black sesame seeds
130g red dates (pitted)
170g walnuts
40g maltose
Water (as needed)
50g brown sugar
Directions
1 Roast the walnuts
Preheat the oven to 150°C (300°F). Roast the fresh walnuts for 10 minutes until fragrant. Remove from the oven, rub off the skins if desired, and chop into small pieces. Set aside.
2 Prepare the black sesame seeds
Rinse the black sesame seeds. Toast them in a dry pan over medium heat until fragrant and fully dried. Set aside.
3 Prepare the red dates
Use pitted red dates. Cut them into small diced pieces and set aside.
4 Cook the sugar syrup
In a non-stick pan, combine brown sugar, maltose, and a small amount of water. Heat over medium heat and cook until the syrup forms large bubbles and thickens.
5 Combine the ingredients
Add the black sesame seeds, chopped walnuts, and diced red dates into the syrup. Stir well until everything is evenly coated.
6 Shape the balls
Let the mixture cool slightly until it is safe to handle. Wear gloves and roll the mixture into small round balls.
7 Finish and store
Allow them to cool completely. Store in an airtight container or wrap them individually if desired.
