Ingredients

10 oz chopped bacon

1 lb Italian ground sausage, mild or spicy

2 tbsp butter

1/2 onion, diced

3-4 garlic cloves, minced

5-6 cups chicken broth

4-5 Yukon gold potatoes, cut into 1-inch pieces

2 cups heavy cream

4 cups kale, chopped

2 tsp salt or to taste

1 tsp black pepper

1 tbsp Italian seasoning

1/8 tsp nutmeg

1/4 cup parmesan cheese, shredded

3 tbsp parsley, chopped

Directions

In a large pot, render down your sliced bacon until crispy and remove from the pan to drain. Remove most of the bacon grease left behind. Use leftover grease to fry up Italian sausage until crispy and remove the pan as well. In the same pan, melt butter and sauté onion and garlic for a few minutes. Add in your diced potatoes along with chicken broth. Bring to a boil and wait 10 minutes until potatoes are fork tender. Add heavy cream, kale, seasonings, the crispy Italian sausage & Parmesan cheese. Simmer for about 10 minutes until creamy and thickened. Serve with the crispy bacon bits, more Parmesan & parsley.
