The recipe below makes 1 whole loaf shown in video. The 8 loafs shown in video = 832g protein in total
Ingredients for Wet Ingredients:
1 Medium Egg
255g (1 Cup + 2 tbsp) Vanilla or Plain Nonfat Greek Yogurt
45mL (3 tbsp) Almond Milk
22 ½ (1 1/2 tbsp) Light Butter, Softened
15g (1 tbsp) Lemon Juice (*optional*)
Note: you may have to add a few more splashes of almond milk if no lemon juice used or batter too thick
Ingredients for Dry Ingredients:
90g (3/4 Cup) All Purpose Flour
72g (1/4 Cup + 2 tbsp) Granulated Sugar Substitute (I used Swerve)
1 3/4 Scoops Vanilla Protein Powder (@legion code nickkaz saves $$)
7g (1 tbsp) Sugar Free Lemon Pudding Mix
6g (1 tsp) Baking Soda
2g (1/2 tsp) Baking Powder
Ingredients for Mix-ins:
75g (1/2 Cup) Blueberries
5g (1/2 tbsp) Flour
mix these together in a seperate bowl to prevent blueberries from exploding in oven
Ingredients for Frosting:
150g (2/3 Cup) Vanilla or Plain Nonfat Greek Yogurt
48g (1/4 Cup) Confectioners Sugar Substitute or Regular Powdered Sugar
1/2 Scoop Vanilla Protein Powder (*optional - add thickness*)
14g (2 tbsp) Sugar Free/Fat Free Cheesecake Pudding Mix
Ingredients for Decoration (*optional*):
1/2 Crushed Golden Oreo + 1 on Top
3 Blueberries on Each
White Writing Icing
Lemon Zest
Lemon Slice
Recipe Note: I used mini loaf pan
Everything that is optional is NOT included in da macros
Directions
Preheat oven to 350°F.
Mix wet ingredients in one bowl.
Mix dry ingredients in another, then combine with wet. Fold in mix-ins gently.
Pour into a parchment lined or greased small loaf tin. Bake 45–50 minutes.
Mix frosting and refrigerate while baking.
Let loaf rest 15 minutes, top with frosting, slice into 8, and enjoy.
