Lemon Blueberry Muffins

Ingredients

Streusel:

4 tbsp flour

3 tbsp brown sugar

Pinch of salt

4 tsp unsalted butter

Muffins:

2 c flour

2 1/2 tsp baking powder

1 c white sugar

1 tbsp lemon zest

2 tbsp lemon juice

1/2 c unsalted butter

2 eggs

2/3 c 2% milk

1 1/2 c blueberries

Directions

400° oven. Line 12 cup pan with paper liners.

Streusel:

In a small bowl, start together, flour, brown sugar, and salt. With fork, stirring butter until moistened.

Muffins:

In a small bowl with together, flour, baking powder, and salt.

In large bowl using fingers, wrap together, sugar, lemon zest, and lemon juice.

Using mixer, beat in butter until fluffy, beaten eggs, one at a time. Scrape side of bowl, stirring flour, alternate in milk. Stir in one cup blueberries.

Put in muffin cups, press in remaining berries. Sprinkle streusel. Bake around 19 minutes.
