Chicken and Scallion stew

Ingredients

2 costco bags of Boneless Chicken thigh

1 bundle Scallion(spring onion)

1 chili

salt

white pepper

black pepper

8-9 ginger sliced

700-800ml boiling water

2 Tbsp soy sauce

10g Potato starch (or cornstarch)

Directions

-Cut chicken into bite sized pieces and marianade with 4g salt and 2g white pepper. Marinade atleast 30 minutes preferably overnight.

-Cut white part of scallion into sticks and green part into smaller pieces

-Thinly slice 8-9 slices of ginger

-Boil water

-Start with a cold pan, put int ginger slices and oil and cook until ginger is curled up.

-Put in the chicken and cook until browned. season with black pepper

-Add in boiling water to cover the chicken. Add 2 tbsp soysauce

-lower heat to simmer until sauce is reduced.

-Thicken with corn starch slurry
