Broccoli Cheddar Soup

Ingredients

4 heads broccoli

1/2 cup unsalted butter

1 med yellow onion, diced

1/2 cup all purpose flour

4 cups half-and-half

4 cups broth

1 cup shredded carrots

4 tsp salt

2 tsp pepper

1/2 tsp ground nutmeg

4 cups grated cheddar cheese

Directions

Trim stems off broccoli heads & cut into small florets

Melt butter in lg pot over med heat. Add onion & saute until translucent (~5 min). Add flour and stir until mixture lightly browns (~ 2-3 min). Pour in half-and-half & cook stirring constantly, until simmering. Reduce heat to low & add broth. Bring to a simmer & cook for 5-10 min until thickened

Mix in the broccoli, carrots, salt, pepper, & nutmeg. Simmer for 10-15 min, until vegetables are tender. Add the cheese a stir until it melts & combines with other ingredients
