Reema's Bourbon Bacon Sweet Potatoes

Yields: 8 servings
Ingredients:
– 4 pounds sweet potatoes
– 1 package bacon (your favorite kind)
– 10 large sage leaves (or more, if desired)
– 5 tablespoons unsalted butter
– 1/3 cup milk
– 2 shots bourbon (adjust to taste)
– Salt and pepper, to taste
Directions
1. Cook bacon until just shy of crispy. Chop and set aside. Reserve bacon drippings.
2. Boil sweet potatoes until fork-tender. Drain.
3. In a large bowl, whip potatoes with butter, bourbon, 1 tablespoon bacon drippings, salt, pepper, and milk until smooth.
4. Fold in half of the chopped bacon.
5. Transfer mixture to a baking dish and top with the remaining bacon.
6. In a skillet, crisp sage leaves in some reserved bacon drippings. Crumble over the sweet potatoes.
7. Bake at 350°F for 15 to 20 minutes, until heated through.
8. Serve hot and savor every bite.
