Ingredients: This makes 6 meals
32oz boneless skinless chicken breast
Marinade:
1 cup non fat plain greek yogurt
1 tbsp olive oil
The juice of half a lemon
1 tsp minced garlic
1 tbsp paprika
1 tsp cumin
1 tsp salt
1/2 tsp pepper
1 tsp honey
1 cup dry quinoa
2 bell peppers
2 zucchini
1 large red onion
1 tbsp oil
salt & pepper to taste
Sauce:
1 1/2 cup non fat plain greek yogurt
1/2 cucumber
1 tsp garlic
1 tbsp lemon juice
1 tbsp dill
Salt to taste
Chicken:
Dice 2 lbs chicken, toss in marinade, let sit 30 mins (or longer if you’ve got time).
Cook at 400°F for 16 mins (air fryer) or 425°F ~20 mins (oven) until done. Chicken should be 165° internal temp
Veggies:
Chop peppers, zucchini, onion. Toss with a little oil, salt, and pepper.
Roast at 400°F for ~20–25 mins, flip halfway.
Quinoa:
Rinse 1 cup (dry) quinoa. Add 2 cups water
Bring to boil, cover, simmer 15 mins. Let it sit 5 mins after it’s done for extra fluffy texture 🙌

Mix everything in a bowl until smooth (ingredients on screen & above)
Split into 6 meal prep containers & you’re done! Meals for the whole week
