Ingredients

1/4 cup pine nuts

1/4 cup grated parmesan

1 bunch basil

1/2 cup olive oil

1 garlic clove

Salt

Directions

lightly toast pine nuts, peel garlic, grate Parmesan, pick and roughly chop basil

In a mortar and pestle, pound garlic and salt.

Add in pine nuts and continue to pound.

Add in cheese and continue to pound.

Remove mixture, then pound basil to a paste.

Add mixture back in, continue to pound while slowly drizzling in olive oil to desired consistency.

Taste and adjust for salt.

Notes

Variations:

Sub some of the Parmesan with pecorino Romano.

Use walnuts or another nut.

Use flat leafed parsley.
