Taste Like a Mocha Truffle but They’re Made with Whole
Makes 24 balls

1 cup pitted Medjool dates
1 cup unsweetened coconut flakes
2 tbsp ground flaxseed
1 tbsp sunflower seed butter (no added sugar
2 tbsp cacao powder
Hot coffee or water (for soaking)
Flaky sea salt (for topping)
Directions
Add pitted Medjool dates to a bowl and pour hot coffee over them. Let soak for 10 minutes, then drain.
Spread coconut flakes on a baking sheet and toast at 350°F for 3-3.5 minutes, watching closely so they don’t burn. Remove and let cool slightly.
Add the soaked dates, toasted coconut, flaxseed, sunflower seed butter, and cacao powder to a food processor. Blend until a sticky dough forms.
Scoop and roll into balls.
Top each ball with a pinch of flaky sea salt.
Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge. Enjoy!
