Rotisserie Chicken Tinga

Ingredients

- 1 or 1/2 can of chipotle peppers depending on how spicy u want it

- 1 white onion

- 3 tomatoes

- 1 tsp oregano

- 1 tsp ground pepper

- 1 tsp salt

- 1 rotisserie chicken

- 3 garlic cloves

- 1 tbsp chicken bouillon

- Tostadas or tortillas

Toppings:

- shredded lettuce

- Avocado

- Cotija cheese

- Mexican sour cream

- Tomatoes

Directions

1. in a skillet heat oil over med heat. Add in your tomatoes, 1/4 of an onion, and your garlic cloves. Fry until slightly toasted. About 5 mins.

2. Add them to a blender w, salt, pepper, chipotle peppers, oregano, 1/2 c water, and bouillon. Blend until smooth.

3. Shred your rotisserie and add to a bowl. Set aside.

4. In a skillet heat some oil over medium. Add 1/2 an onion sliced. Fry the onions until translucent.

5. Then add in your sauce. Bring to simmer and let that cook for about 2 mins.

6. Add in your shredded chicken mix well. Adjust any seasoning to your liking, and let that cook covered over med low heat for 5 mins.

7. Either fry tortillas or buy store bought tostadas.

8. Then assemble your tostadas. Add your chicken then top with whatever toppings you’d like. I added my preferred toppings above. Serve and enjoy babe!
