chicken fried chicken
2 chicken breasts
buttermilk (enough to cover)
hot sauce
3 cups all purpose flour
1/2 cup cornstarch
black pepper
salt
cajun seasoning
canola oil, for drying
Directions
butterfly the chicken breasts. season with whatever makes ya little heart happy! (i used cajun seasoning!)
cover with buttermilk & add a little hot sauce. let marinate in the icebox (fridge) for AT LEAST an hour!
in a bowl, combine the flour & cornstarch. season well. remove the chicken from the buttermilk, coat with the flour, once more to the buttermilk and again in the flour. place on a wire rack & let rest at room temp for about a half hour.
heat the oil until sizzling & fry the chicken, one at a time, on both sides until golden brown and 165°F internal temp. drain on a wire rack.
milk gravy
1/4 cup bacon grease
2 tbs all purpose flour
2 cups milk
black pepper
salt
in a small pot, combine the bacon grease and flour. cook on medium low for about 5 minutes, stirring often. slowly whisk in the milk. season well & simmer til it thickens slightly.
