Kath's Pepperoni Bread

Ingredients

  • Dough

  • Hormel Pepperoni - I use about two small packages or one larger package sold at Costco

  • 2- Packages of Shredded Mozzarella Cheese - I have used sliced mozzarella too but it doesn't come out as good.

  • 5 tablespoons of Butter

  • ¼ Teaspoon Oregano

  • ½ Teaspoon of Parsley

  • ¼ Teaspoon of Lawrey's Seasoned Salt

  • Parmesan Cheese

Directions

  • Dough - I used Manicini's Dough- If you want to make a big loaf, use the whole dough, otherwise, I would separate the dough into two pieces.

  • Let it rise for about one hour. When the dough has risen and you are ready to roll it out, (don't roll out too thin or it will rip from the filling)

  • melt the butter in a pan and add the seasonings to the butter.

  • Roll the dough out into a square or rectangle.

  • Take a pastry brush and brush the butter mixture on to the dough.

  • Start layering the pepperoni in rows overlapping but do not take them all the way to the edges.

  • layer the mozzarella over the pepperoni.

  • Now, take the two sides and fold them inward about an inch and then roll the dough up in a log.

  • Once you have it rolled up, put on a baking pan that has parchment paper on it so as not to stick to the pan. I have also used a larger loaf pan to put it in as well, up to you.

  • Now, take the butter mixture and brush the outside of the dough.

  • Finally, sprinkle the parmesan and a few shakes of parsley on top of the dough.

  • Bake in a 350 degree oven for 30-40 minutes. If it looks like it is not done, leave in the oven for a few more minutes. Let it sit for awhile before you slice it, otherwise, the cheese will all come out of it.
