Zanes' Parmesan Crusted Grouper

• 4 grouper filets about 6 oz. each
• 1 cup panko breadcrumbs (broken up into smaller pieces)
• 1 cup flour
• 3 eggs
• 1 pinch of salt
• 1 pinch of pepper
• 4 tbsp freshly shredded parmesan (optional)
• Lemon juice (optional)
The Parmesan mixture
• 3/4 cup of grated Parmesan cheese
• 1/2 cup of butter, softened
• 4 tablespoons of mayonnaise
• 1 dash hot pepper sauce (e.g. Tabasco™)
• salt and pepper to taste
Directions
Oven Directions
• First, preheat the oven to broil with the rack in the middle position.
• In a small bowl, combine the Parmesan Mixture ingredients. Mix all the ingredients well. The consistency should be thick so that when you put it atop the fish it does not quickly run off the sides.
• Rinse the fillets and dry them using a paper towel. *Drying is very important here.
• Salt and pepper the grouper filets, coat in egg, flour, egg and then panko breading.
• Sprinkle some lemon directly onto the top of the fillet.
• Put your tray into the oven and cook for 12 minutes on each side, or to an internal temperature of 145°F (63°C).
• Spoon the Parmesan mixture on to the fillets and spread it out to cover the top. You should have enough to put a thick layer over all your fillets. Sprinkle the fresh parmesan atop the covered fillets.
• Now put the dish back into the oven for just about 45 seconds.

• Put your tray into the air fryer and cook for 5-1/2 to 6 minutes on each side, or to an internal temperature of 145°F (63°C) to 165°F (74°C).
• Spoon the Parmesan mixture on to the fillets and spread it out to cover the top. You should have enough to put a thick layer over all your fillets. Sprinkle the fresh parmesan atop the covered fillets.
• Now put the dish back into the oven for just about 45 seconds.
