Cheesy Baked Fajita Chicken

4 boneless, skinless chicken breasts
1 packet fajita seasoning
2 tablespoons olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 cup shredded Mexican cheese blend
Directions
Preheat your oven to 375°F (190°C).
In a large bowl, mix fajita seasoning with olive oil. Add chicken breasts and toss to coat evenly.
Arrange the chicken breasts in a baking dish. Top with sliced red bell pepper, green bell pepper, and onion.
Sprinkle shredded Mexican cheese blend over the top of the chicken and vegetables.
Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F or 74°C) and the cheese is melted and bubbly.
Serve hot, optionally with a side of rice or tortillas.
