Chicken Caesar Smash Tacos

Next up are these chicken caesar smashed tacos, for when you still want to eat healthy, but don’t fancy a standard salad! They’ve got seasoned chicken mince, smashed and cooked on the soft taco, then topped with lettuce mixed with my homemade, high protein Caesar salad dressing and finished with crispy bacon bits for a treat! with 39g of protein in 2 tacos! They’re topped with my iconic homemade Big Mac sauce, so save the recipe below & try it yourself! ⬇️

Macros (per 2 tacos): 444 - 39gP, 44g C, 13g F

Chicken Mince Ingredients:

250g chicken breast mince

1tsp minced garlic

1tsp mixed herbs

½ smoked paprika

Salt & black pepper to taste

Other Ingredients:

1 small head of romaine lettuce

2tbsp bacon bits

4 small soft tacos @missionwrapsuk_

Homemade Caesar Dressing:

75g 0% thick greek yogurt @fage_uk

25g lighter than light @hellmannsuk mayonnaise

½ minced garlic

¼ dijon mustard

1tbsp @leaandperrinsuk Worcestershire sauce

1tbsp grated parmesan

1 ½ @johnwestuk anchovy fillets

Quarter of a lemon, juiced

Black pepper to taste

Directions

Mix the chicken mince with the minced garlic, mixed herbs, smoked paprika and salt & black pepper to taste

Smash the seasoned chicken mince evenly onto the mini tortillas, spreading thinly with a fork and to the edges

Heat a pan on medium-high heat, spray a little oil & once hot, pan fry the smashed tacos, meat side down till cooked and slightly crispy (TIP: press down firmly onto the tacos while cooking to help it cook evenly)

While the smash tacos cook, add all the homemade caesar dressing ingredients into a small blender & blend till smooth to make the sauce, then mix half with the shredded romaine lettuce & set aside

Assemble the smashed tacos with the dressed romaine lettuce, another drizzle of Caesar dressing on top and bacon bits
