Cinnamon Sugar Apple Cake

1 1/2 cups brown sugar
1/3 cup oil
1 egg
1 cup buttermilk or (1 cup milk + 1 tablespoon white vinegar)
1 teaspoon vanilla
1 teaspoon baking soda
2 1/2 cups flour
2 1/2 cups chopped Honeycrisp apples (3-4 apples, depending on size; rough chopped, small dice, or slivered)
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon butter, melted
Directions
Preheat oven to 325 degrees. Mix or whisk ingredients in order given, stirring until just combined. Fold in your apples.
Pour batter into a buttered 9×13 pan (alternatively, you can line with parchment paper).
Combine last 3 ingredients to make a topping and sprinkle / spread it evenly over the batter.
Bake for 45 minutes. Test with a toothpick if needed. Serve with honey butter or whipped cream if you want. APPLE CAKE IS THE BEST!

Nov 2021: Made exactly as written, using 3 medium apples, for the Grey's night girls. Big hit with everyone! It's very sugary for sure, but it is delicious! New go-to favorite way to use up apples before they go bad. Would also be terrific to take for a pitch-in.
