Banana Oat Bars

Ingredients

2 cups rolled oats

• 6 tablespoons water

• 1/2 tsp salt

• 3 tablespoon nut butter

1 teaspoon vanilla extract

• 1 1/3 cup mashed ripe bananas (2-3)

• 3 tablespoons maple syrup, honey, or coconut sugar

Optional mix ins

• 1/2 teaspoon cinnamon

• 2 tablespoons flax meal

• 2 scoops protein powder, unflavored

Optional Toppings

• 2 tablespoons chopped nuts of choice

• 2 tablespoons chocolate chips (I like mini)

Directions

  1. Preheat oven to 350 degrees and grease an 8x8 pan. Mix all ingredients together then spread in prepared pan. Top with choice of chopped nuts & chocolate chips if desired, I like to lightly press them in.

  2. Bake for 20 minutes, then turn off oven & leave for an additional 5 minutes.

  3. Store leftovers in the refrigerator or freezer for later.
