Honey Butter Biscuit Chicken Casserole

1.5 Ibs Boneless Skinless Chicken breast, chopped
12 oz bag Peas & Carrots, thawed
11.36 oz box Red Lobster Honey butter Biscuit Mix
10.5 oz can Campbell's Chicken Gravy
2/3 cup Cold Water
1/2 cup Light Sour Cream
2 Tbsp Butter, melted
1 Tbsp Honey
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1/2 Tbsp Olive Oil
1 tsp Smoked Paprika
1 tsp Thyme
1/8 tsp Cayenne
Salt and Pepper to taste
Directions
I. Start by preheating your oven to 425°F. While your oven is preheating, season your chopped chicken with I Tbsp garlic powder, I Tbsp onion powder, I tsp smoked paprika, 1/8 tsp cayenne, and a little salt and pepper. Mix to coat and set aside.
2. Heat a large skillet over medium-high heat and add in 1/2 Tbsp olive oil. Once your oil is hot add in your seasoned chicken, and flash sear for about 2 minutes on each side. Don't worry if the chicken is not cooked through, it will finish cooking in the oven. When your chicken is done set aside.
3. Next, in a large mixing bowl add your biscuit mix, 2/3 cup cold water, and I Tbsp honey. Mix and set aside.
4. Grab a 9x13 casserole dish, add in your cooked chicken, thawed peas and carrots, chicken gravy, 1/2 cup light sour cream, and I tsp thyme. Mix well then top with your biscuit mix to make 6 biscuits.
5. Place your casserole dish in the oven on 425°F and bake for 15 minutes or until your chicken and biscuits are cooked through.
6. A couple of minutes before your casserole is done cooking, prepare your honey butter by mixing 2 Tbsp of melted butter with the honey butter packet from the box of biscuits.
7. Once you're happy with the cook on your casserole, remove it from the oven and brush the biscuits with your honey butter.
8. Divide into 6 servings and enjoy!
