Ingredients

1 cup low -fat cottage cheese (2%)

1/2 cup rolled oats

1 large eg g

1/2 teaspoon baking powder

1/4 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1 pinch kosher salt

Directions

Place the cottage cheese, rolled oats, egg, baking powder, cinnamon, vanilla extract, and salt into a high-speed blender.

Pulse and blend until the mixture reaches a completely smooth, homogenous consistency.

Preheat a non-stick skillet over medium-low heat and lightly coat with non-stick cooking spray or a small amount of neutral oil.

Pour the batter onto the skillet in 1/4 cup increments to form individual hot cakes.

Cook for approximately 3 to 4 minutes until bubbles form on the surface and the edges appear matte and set.

Flip the hot cakes carefully using a thin spatula and cook for an additional 2 to 3 minutes until both sides are golden brown and the center is cooked through.

Transfer to a plate and serve immediately to maintain texture.
