1 cup water
1 cup old-fashioned rolled oats
1/4 teaspoon kosher salt
1/2 cup cold whole or 2% milk
2 large eggs

Directions
Step 1
Bring 1 cup water to a boil in a medium saucepan over medium-high heat. Add 1 cup old-fashioned rolled oats and 1/4 teaspoon kosher salt. Reduce the heat to medium-low and simmer until the oats are tender and the water is completely absorbed, 3 to 4 minutes.
Step 2
Whisk in 1/2 cup cold whole milk. Add 2 large eggs to the now-empty measuring cup and beat until no white streaks remain. Whisk the beaten eggs into the oatmeal, and cook, whisking occasionally, until thickened and creamy, 3 to 5 minutes (do not let it come to a boil). Serve with toppings if desired.
