Chorizo and Corn Fried Rice

Ingredients

-1/3 Spanish Chorizo, diced

-Vegetable Oil

-2 Corn Cobs, kernels removed

-2 Shishito Peppers or Poblanos, sliced

-3 Scallions, whites only, sliced

-500g Day-Old Rice

-Salt, to taste

-MSG, to taste

-1 tsp Light Soy Sauce

-1 tsp Sesame Oil

-Scallion Greens, for garnish

-Fresh Cilantro, for garnish

Directions

Heat oil in wok and add chorizo, cook until slightly crispy and reserve - about 1-2 minutes. Add corn to wok and cook for about 1 minute and reserve. Add peppers and scallion whites into wok, cook for about one minute and reserve.

Add rice to wok and begin cooking, trying to break up back into individual grains, about 1 minute then return over ingredients to wok and combine. Add salt and MSG to season.

Add soy sauce around the wall of the work and allow to run down into mixture. Add sesame oil over fried rice.

At the end of cooking, add garnish and stir before plating.
