Mediterranean Baked Fish with Olives & Roasted Cherry Tomato

4 white fish fillets (cod, tilapia, or haddock)
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp paprika
1 tsp dried oregano
1½ cups cherry tomatoes
½ cup Kalamata olives
3 cloves garlic, minced
2 tbsp capers (optional)
2 tbsp fresh parsley, chopped
1 tbsp lemon juice
1 tsp lemon zest
Directions
Preheat oven:
Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
Prepare base:
Place cherry tomatoes, olives, and garlic in the baking dish. Drizzle with 1 tbsp olive oil, sprinkle with salt, pepper, and oregano, and toss gently.
Add fish:
Place fish fillets on top of the tomato mixture. Drizzle remaining olive oil over the fish and season with paprika, salt, and pepper.
Bake:
Bake for 20–25 minutes until fish is flaky and cooked through, and tomatoes are soft and slightly roasted.
Finish:
Remove from oven and drizzle with lemon juice and zest. Sprinkle fresh parsley on top.
Serve:
Serve warm with rice, couscous, or crusty bread.

Use fresh, firm fish for best texture
