Healthy Chicken Caesar Wraps

Ingredients

1/2 cup Panko breadcrumbs

1 Tbsp olive oil

2 cups cooked chicken (chopped)

2 cups romaine lettuce (shredded)

1/3 cup roasted red peppers (diced)

1 avocado (diced)

1/2 cup Caesar dressing (plus more if desired)

1/4 cup freshly grated parmesan cheese

Salt and pepper (to taste)

4 large (10-inch) flour tortillas

Directions

Toast the breadcrumbs. Heat olive oil in a small skillet over medium heat. Add the panko breadcrumbs and toast for 3-5 minutes, stirring often, until golden and crispy. Remove from heat and let cool.

Make the Caesar dressing. In a blender or bowl, combine Greek yogurt, olive oil, lemon juice, Dijon mustard, Worcestershire sauce, garlic, parmesan cheese, salt and black pepper. Blend or whisk until smooth. Add water, one tablespoon at a time, until the dressing reaches your desired consistency.

Mix the filling. In a large bowl, combine the cooked chicken, romaine lettuce, roasted red peppers, avocado, Caesar dressing, and parmesan cheese. Toss everything together until evenly coated. Season with salt and pepper, to taste.

Add the crunch. Right before assembling, gently fold in the toasted panko bread crumbs so they stay nice and crispy.

Assemble the wraps. Warm the tortillas slightly to make them easier to roll. Divide the Caesar mixture evenly between the tortillas. Wrap tightly like a burrito, slice in half, and serve immediately.
