Thai Peanut Noodles

8 oz rice noodles
1 can coconut milk
1/4 cup peanut butter
2 tbsp soy sauce
1 tbsp red curry paste
1 tbsp lime juice
1 cup vegetable broth
2 cups broccoli florets
1 bell pepper, sliced
1/4 cup chopped peanuts (for garnish)
Directions
Combine coconut milk, peanut butter, soy sauce, red curry paste, lime juice, and vegetable broth in the crockpot.
Add broccoli and bell pepper.
Cook on low for 3-4 hours or high for 2-3 hours.
Add rice noodles in the last 30 minutes of cooking.
Garnish with chopped peanuts and serve.
