Ingredients

200ml White Rum

100ml Spiced Rum

200ml Coconut Cream

100ml Lime Juice

200ml Pineapple Juice

250ml Milk

Pineapple Frond

Ice Cube

Directions

Mix together your rums, coconut cream, lime juice and pineapple juice in a large container with a whisk.

Fill a second container with your milk and then pour in your cocktail. It is important to do it this way around so all your drink touches the milk and clarifies.

Let this sit for 2-3 hours in the fridge.

Once it's had time to rest, carefully and slowly pour the mixture into a funnel and coffee filter, leading to another container.

Let this drip until it turns clear, this may take 2 mins. Then carefully place the funnel and coffee filter into a new container and re-pour the filtered slightly misty liquid back into the funnel.

Wait until everything is filtered then bottle it up. This may take a few hours again.

Serve over a large ice cube with a pineapple frond. You can keep the bottle in the freezer and come back for more whenever you like.
