Cinnamon Toast Crunch Nut Clusters

3 cups mixed raw nuts (I used pecans and cashews)
1 egg white
½ cup sugar
1½ tsp cinnamon
1 tsp vanilla
1 tsp potato starch
Optional- 1/4 tsp salt
Directions
Bake at 300°F for 12-15 minutes.
Let cool completely, they harden as they cool
Tip- Make ahead and freeze! Otheriwise, store in an airtight container in your pantry.
