Ingredients

1 or 2 chunks of salmon

Onion, thinly sliced

Lemon, thinly sliced

Italian Caesar dressing

Directions

Rinse and pat dry 1 or 2 hunks of salmon, depending on size of your family (I usually get the filets to avoid bones; if you use salmon steaks, you might need to cook it a little longer). Layer thinly sliced onion and thinly sliced lemon on top. Cover with Italian Caesar dressing. Crimp foil so it's totally enclosed (no juices or steam should be able to escape). Cook on low grill for 30 minutes.

Notes

Laurie Taylor's recipe, via Lannie's Favorite Recipes

This is a very moist and tender way to serve salmon. If you don't like lemon, don't use lemon. (I usually put lemon on half of the salmon because only half the family will eat it that way) If you don't have Italian Caesar dressing, mix up some oil & vinegar or lemon juice, salt and any other herbs you like. Try adding parmesan cheese to it.
