Mango & Sweet Potato Breakfast Hash

1 cup of andouille sliced andouille sausage
1 cup of finely diced white onion
2 tbsp of water
2 tsp of brown sugar
1/2 tsp of white pepper
1 tbsp of canola oil
2 cups of diced sweet potatoes
2 cups of fresh mango, diced
1/2 tsp of kosher salt
3 tbsp heavy cream
Directions
In a large skillet over medium heat, render the fat out of the sausage, then remove and set aside until needed.
Over medium heat, heat the canola oil.
Add sweet potatoes once oil has heated.
Cook, stirring often, for 7-8 minutes, until the sweet potatoes start to soften
Add the onions and cook for an additional 5 minutes over medium, stirring often, until onions become translucent.
Add water and sausage, cover the pan, and cook for 5-8 minutes on medium, until potatoes have softened considerably and water has evaporated.
Stir in the mango, brown sugar, salt, and pepper; cook for a few minutes, stirring often, until mango is warmed through.
Add the heavy cream and stir it in to incorporate with the juice from the mango.
Notes
Throw in some crushed walnuts?
