Instant Pot #1 – Chicken

2½ lb boneless, skinless chicken breasts

1 cup low-sodium chicken broth

1 packet ranch seasoning

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

Instant Pot #2 – Rice

2 cups jasmine rice, rinsed

2½ cups chicken broth

Steam

12 oz broccoli florets (microwave or steam until just tender)

Directions

Cook on High Pressure:

Frozen: 12 minutes + 10-minute natural release

Fresh: 8–10 minutes + 5-minute natural release

Shred the chicken.

Cook rice on High Pressure for 4 minutes, then 10-minute natural release.

Stir Together

Shredded chicken

Cooked rice

Broccoli

1 cup nonfat plain Greek yogurt

1 cup blended low-fat cottage cheese

1½ cups reduced-fat sharp cheddar

½ cup reduced-fat mozzarella

6 slices turkey bacon, cooked and crumbled (optional but highly recommended)

2–3 green onions, sliced

If it’s too thick, stir in ¼–½ cup of the chicken cooking liquid or a little extra broth.
