Lemon Blueberry Loaf

Ingredients

1/3 cup of melted butter, salted

1 cup of sugar

3 tbsp of lemon juice

2 large eggs

1 1/2 cups of all purpose flour

1 tsp baking powder

1/2 cup milk

1 cup of blueberries (fresh or frozen)

1 tbsp of flour

2 tbsp of lemon zest

Glaze :

1/2 cup of icing sugar

1 tbsp of lemon juice

Lemon zest

Directions

In a bowl blend your butter, eggs, lemon juice, and sugar.

In a separate bowl combine your flour and baking powder

Slowly add your dry ingredients into your wet alternating with milk

Coat your blueberries with flour and add to batter, along with lemon zest

Pour into greased load pan and bake at 350 F for 50-60 minutes

Once completely cooled add your lemon glaze (optional)
