Butter Poached Lobster

2 sticks salted butter
Garlic, minced (to taste!)
6 lobster tails
Salt & pepper to taste
Fresh parsley & lemon for serving
Directions
To start, flip the lobster tail over onto its back. Using your hands, crack the ribs, then use kitchen shears to cut down the full length of the underside of the tail until you reach the tail fin, and stop cutting. Gently remove the meat from the shell in one piece by wiggling carefully. Save the shells to make a seafood stock for later!
If needed, remove the digestive tract from the lobster tail (if there is one visible). Make a shallow cut along the back of the tail or cut the tail in half lengthwise. Pull the vein out & discard it.
Pat the lobster tails dry with paper towels. Season both sides with salt & pepper.
In a large skillet, melt the butter over medium-low heat. Add the minced garlic, & stir constantly for about 1 minute, until the garlic is fragrant. Don’t burn it!
Place lobster meat in the skillet or saucepan & begin basting it with the butter. You may need to work in batches to not overcrowd the pan. Cook for 2-4 minutes on each side until the meat is completely opaque. The tails may begin to curl gently, & the temperature should read 140°F with an instant-read thermometer.
Serve with fresh lemon and parsley, & enjoy!
