2 cups warm water
⅔ cup warm milk
(Or: 4 tbsp cream + enough water to total ⅔ cup)
⅔ cup sugar
4 ½ tsp active dry yeast (2 packets)
⅔ cup melted butter
2 large eggs
3 tsp salt
8–9 cups all-purpose flour (start with 8, add only if needed)
Directions
1. Activate the Yeast
In a large mixing bowl, combine:
Warm water
Warm milk
Sugar
Yeast
Stir and let sit 5–10 minutes, until foamy.
2. Make the Dough
Add melted butter, eggs, and salt.
Mix in 8 cups flour.
Knead 8–10 minutes (mixer or by hand).
Add up to 1 more cup flour only if the dough is too sticky.
Dough should be very soft and slightly tacky — this is what makes them fluffy.
3. First Rise
Place dough in a greased bowl.
Cover and let rise 1 hour, or until doubled.
4. Shape the Rolls
Turn dough out onto a floured surface.
Divide into 24 equal pieces (or 30 if you want slightly smaller).
Shape into smooth balls and place on parchment-lined sheet pans.
Place close together for soft sides
Spread apart for evenly browned edges
5. Second Rise
Cover and let rise 30–45 minutes, until puffy.
6. Bake
Preheat oven to 375°F.
Bake 12–15 minutes, until golden brown.
You may need 2 racks and 2 sheets for this batch.
7. Butter the Tops
Brush immediately with melted butter.
Serve with honey butter for the classic Logan’s flavor.
