Chicken Madeira Sauce

1/4 tsp salt
1/4 tsp black pepper.
2 Tbsp Butter
1 Tbsp Olive Oil
1 large or 2 small Shallots
2 large garlic cloves minced
2 Tsp Parsley
1 1/2 cups Madeira Wine sweet white wine*
1 1/2 cups beef stock or broth (water and two large beef bullion cubes)
1/4 cup Heavy cream
Directions
Place a sauce pan over medium/high heat and melt in 2 Tbsp butter and 1 Tbsp olive oil.
Add in diced shallots and cook till starting to brown.
Add minced garlic cloves then season with 1/4 tsp salt and 1/4 tsp black pepper and 2 tsp parsley. Cook till fully browned.
Add 1 1/2 cups Madeira wine and boil until reduced by half (5 minutes vigorous boiling), scraping the bottom of the pan to deglaze.
Add 1 1/2 cups beef broth and simmer for 5 min. Reduce heat to medium, add 1/4 cup cream and simmer for 2 min. Add Kitchen Bouquet to darken. Use Cornstarch to thicken. Season with salt and pepper to taste.
