Bananas Foster Banana Bread French Toast

Ingredients

1 cup (220g) brown sugar, light or dark

1/2 cup (65g) chopped walnuts

1/4 cup (58g) salted butter

1 tsp (2g) cinnamon

1/3 cup (80ml) maple syrup

1 tsp (4g) vanilla bean paste or extract

Optional: 1 tsp (4g) rum extract

2 large bananas or 3 medium bananas, sliced into 1” coins

1/4 cup (30g) all-purpose flour

1 tbsp (12g) granulated sugar

1/2 tsp (1g) cinnamon

1/8 tsp nutmeg

Large pinch of salt

1 cup (240ml) milk of choice

3 eggs

2 tsp (8g) vanilla bean paste or extract

4-6 thick slices (1.25” thick) of leftover banana bread (I used my Brown Butter Chocolate Chip Banana Bread), OR 12 slices (1" thick) of brioche bread/bread of choice

Directions

Start by preparing the bananas foster topping. In a large skillet over medium heat, add the brown sugar, chopped walnuts, butter, and cinnamon. Stir to combine and let cook for 1-2 minutes, until the brown sugar has dissolved and the mixture is thickened/bubbling.

Then add the maple syrup, vanilla extract, rum extract (if using), and banana slices. Toss to coat the banana slices in the sauce and cook for an additional 1-2 minutes, until the bananas have softened and the mixture is bubbling and thickened. Don't cook any longer, or the bananas will become too soft and mushy.

Remove from the heat and set aside until ready to use.

In a medium bowl, whisk together the flour, sugar cinnamon, nutmeg, and salt. Then, slowly whisk in the milk until smooth (this will help to remove any large clumps of flour and spices before adding the eggs).

Whisk in the eggs and vanilla until well combined.

Heat a large skillet or griddle over medium heat and grease with butter.

Dip the slices of banana bread into the egg custard, making sure both sides are well-coated. Place the dipped banana bread slices onto the hot skillet/griddle and cook until golden brown on each sides, about 4-5 minutes total.

Repeat with the remaining banana bread slices and egg custard.

Once ready to serve, gently reheat the bananas foster topping if needed.

Plate and serve the banana bread French toast warm with the bananas foster topping and a dusting of powdered sugar, if desired.
