Spinach Bars

4 Tablespoons butter
3 large eggs
1 cup flour
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
1 pound grated cheddar
1 10 ounce package frozen spinach ( thawed, uncooked)
1 small minced or grated onion
6 medium mushrooms chopped (optional)
Directions
Preheat oven to 350 degrees F
Melt butter in a 9x13 baking pan. Set aside
Squeeze water from spinach
In a bowl mix together all ingredients except the butter.
Pour mixture over the melted butter.
Bake for 35 minutes.
Let cool a bit before cutting.
Cut into 1 inch squares for appetizers or larger for a side dish.

Mushrooms are optional.
In case of leftovers, they are delicious warmed up.
The better the quality of cheese, the better the spinach bars will be.
