Loaded Tater Tots Recipe (Totchos)

32 ounces frozen tater tots (1 bag)
2 tablespoons taco seasoning (divided)
1 tablespoon olive oil
1 pound 90% lean ground beef
½ white onion (diced)
1 clove garlic (minced)
8 ounces freshly shredded Colby jack cheese
Pico de gallo
Sour cream
Guacamole
Sliced green onions
Chopped fresh cilantro
Diced jalapeño peppers
Directions
Bake
Toss the tater tots with 1 tablespoon of the taco seasoning and bake them according to the package directions. Add a few minutes if needed to get them extra crispy. If not at 400°F, turn the oven to 400°F once the tots are done.
Cook
While the tots bake, heat the olive oil in a large skillet over medium heat. Add in the ground beef, onion, garlic, and the remaining 1 tablespoon of taco seasoning. Cook, breaking the beef up with a spoon, until the beef is no longer pink and the onion is translucent.
Scatter
Once the tots are cooked, scatter the beef mixture over the top.
Bake
Top with shredded cheese and bake until the cheese is melted, about 7-10 minutes.

Remove from the oven and add your desired toppings before serving.
