Broccoli Cheese Quinoa Casserole

Ingredients

2 cups of vegetable broth or water

1 cup quinoa, rinsed under running water in a mesh sieve for a minute and drained

16oz brocoli (2 heads) sliced

3/4 tsp salt

10 twists black pepper

2 1/2 cups shredded sharp cheddar cheese

1 cup of milk

garlic salt

1 bag garlic cheese croutons

Directions

1. to cook the quinoa: bring the vegetable broth or water and quinoa to a boil in a medium sized pot. reduce heat to low and simmer, covered, for 10 to 20 minutes or until all the liquid is absorbed. cover and set aside to steam for 5 minutes.

2. put cut up broccoli into a large bowl with lots of water and a silicone lid and microwave it on high for 7 minutes to steam the broccoli

3. preheat the oven to 350°. add the salt, pepper and garlic salt to the pot of quinoa and stir to combine. set aside. 3/4 cup of cheese for later. then add the rest of the cheese to the pot. pour in the milk and stir until the cheese and milk are evenly incorporated in the quinoa.

4. pour the cheesy quinoa into a 9-in square baking dish and top with a roasted broccoli. stir until the broccoli is evenly mixed in with the quinoa. add more garlic salt as needed for taste. sprinkle the surface of the casserole with the reserved 3/4 cup of cheese, then sprinkle croutons on top.

5. bake, uncovered for 25 minutes until the top is golden. allow to cool for 10 minutes before serving.
